Miking an acoustic guitar is quite straight forward once you get the hang of it. The best results I’ve had are to use a couple of good dynamic microphones with one at the sound hole and the other near the head stock.
This gives you a very natural sounding acoustic and is perfect as a pad track of even for a much simpler recording with just a vocal and guitar.
Another nice benefit of this method is that its gives you a really nice stereo image. If you pan your recording from the two mics left and right it will almost sound as though the guitarist is sitting in front of you.
